Garlic and Herb Marinated Grilled Steak Kabobs

Ingredients:

  • 2 lbs. sirloin steak, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 yellow onion, cut into 1-inch pieces
  • 1 pint cherry tomatoes
  • 3 cloves of garlic, minced
  • 1/4 cup olive oil
  • 2 tbsp. balsamic vinegar
  • 2 tbsp. dried oregano
  • 2 tbsp. dried basil
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • Skewers

Instructions:

  1. In a large bowl, combine minced garlic, olive oil, balsamic vinegar, dried oregano, dried basil, salt, and black pepper.
  2. Add the sirloin steak cubes to the bowl, and toss to coat the meat evenly with the marinade.
  3. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes (or up to 24 hours) to allow the flavors to develop.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated sirloin steak cubes, red bell pepper, green bell pepper, yellow onion, and cherry tomatoes onto the skewers in any order you prefer.
  6. Grill the kabobs for about 10-15 minutes, turning occasionally, until the steak is cooked to your desired level of doneness.
  7. Remove the kabobs from the grill and let them rest for 5 minutes before serving.
