Garlic and Herb Grilled Halloumi Salad

Invigorate your next summer BBQ or gathering with this delightful garlic and herb grilled halloumi salad. Halloumi, a Cypriot cheese renowned for its high melting point, is an ideal choice for grilling as it stays crunchy on the outside while retaining its creamy texture within.

Combined with fresh greens, vibrant veggies and a tantalizing mix of flavorsome herbs and garlic – this delectable dish offers up something truly unique! Serve as either lunch or dinner; complementing beautifully when served alongside other sizzling meats and vegetables from the grill.

Ingredients:

  • 1 block of halloumi cheese
  • 2 cloves of garlic, minced
  • 2 tbsp of chopped fresh herbs (such as parsley, basil, and oregano)
  • 2 tbsp of olive oil
  • Salt and pepper, to taste
  • 4 cups of mixed greens (such as arugula, spinach, and lettuce)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1/2 red onion, sliced
  • 1/2 cup of cherry tomatoes, halved
  • 1/4 cup of Kalamata olives, pitted and sliced

Instructions:

  1. Preheat the grill to medium-high heat.
  2. Cut the halloumi cheese into 1/2 inch thick slices.
  3. In a small bowl, mix together the minced garlic, chopped fresh herbs, olive oil, salt, and pepper.
  4. Brush the garlic and herb mixture onto both sides of the halloumi slices.
  5. Grill the halloumi slices for 2-3 minutes on each side, or until they are golden brown and crispy.
  6. In a large bowl, toss together the mixed greens, sliced bell peppers, sliced red onion, halved cherry tomatoes, and sliced Kalamata olives.
  7. Arrange the grilled halloumi slices on top of the salad.
  8. Serve the salad immediately, and enjoy!
