Garlic and Herb Grilled Zucchini Salad

Ingredients:

  • 3 medium zucchinis, sliced lengthwise
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh basil
  • 1 tbsp chopped fresh mint
  • 2 cloves of garlic, minced
  • 1 tbsp honey
  • 2 tbsp lemon juice
  • 2 tbsp white wine vinegar
  • ¼ cup extra-virgin olive oil

Instructions:

  1. Preheat a grill or a grill pan to high heat.
  2. In a bowl, mix together the sliced zucchini, 2 tbsp of olive oil, 1 tsp of salt, and 1 tsp of black pepper.
  3. Grill the zucchini slices for 3-4 minutes on each side or until they are slightly charred.
  4. In a separate bowl, whisk together the chopped parsley, basil, mint, minced garlic, honey, lemon juice, white wine vinegar, and extra-virgin olive oil until the dressing is emulsified.
  5. Arrange the grilled zucchini slices on a serving plate, and drizzle the garlic and herb dressing over the top.
  6. Garnish with additional fresh herbs, if desired.
