Ingredients:
- 1 block of halloumi cheese
- 2 cloves of garlic, minced
- 2 tbsp of chopped fresh herbs (such as parsley, basil, and oregano)
- 2 tbsp of olive oil
- Salt and pepper, to taste
- 4 cups of mixed greens (such as arugula, spinach, and lettuce)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1/2 red onion, sliced
- 1/2 cup of cherry tomatoes, halved
- 1/4 cup of Kalamata olives, pitted and sliced
Instructions:
- Preheat the grill to medium-high heat.
- Cut the halloumi cheese into 1/2 inch thick slices.
- In a small bowl, mix together the minced garlic, chopped fresh herbs, olive oil, salt, and pepper.
- Brush the garlic and herb mixture onto both sides of the halloumi slices.
- Grill the halloumi slices for 2-3 minutes on each side, or until they are golden brown and crispy.
- In a large bowl, toss together the mixed greens, sliced bell peppers, sliced red onion, halved cherry tomatoes, and sliced Kalamata olives.
- Arrange the grilled halloumi slices on top of the salad.
