Garlic and Herb Baked Salmon with Vegetables

Ingredients:

  • 4 salmon fillets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red onion, sliced
  • 3 cloves of garlic, minced
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together the minced garlic, chopped thyme and rosemary, olive oil, salt, and pepper.
  3. Place the salmon fillets and sliced vegetables in a large baking dish.
  4. Pour the garlic and herb mixture over the salmon and vegetables, making sure they are coated evenly.
  5. Bake for 15-20 minutes, or until the salmon is cooked through and the vegetables are tender.
  6. Serve hot, and enjoy!
