Ingredients:
- 4 salmon fillets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 red onion, sliced
- 3 cloves of garlic, minced
- 2 tbsp fresh thyme, chopped
- 2 tbsp fresh rosemary, chopped
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions:
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together the minced garlic, chopped thyme and rosemary, olive oil, salt, and pepper.
- Place the salmon fillets and sliced vegetables in a large baking dish.
