Ingredients:

  • 2 Romanesco beets
  • 2 tbsp of olive oil
  • 4 cloves of garlic
  • 1 tbsp of fresh thyme
  • 1 tbsp of fresh rosemary

  • 1 orange, peeled and diced
  • 1 tbsp of fresh mint leaves, chopped

Instructions:

  1. Preheat your oven to 400°F (205°C).
  2. Peel the Romanesco beets and cut them into small chunks.

  4. Spread the beets out on a baking sheet and roast in the oven for 25-30 minutes, or until they are tender and lightly browned.
  5. In a small bowl, mix together the diced orange and chopped mint.
  6. Remove the beets from the oven and transfer to a serving dish.
  7. Top the beets with the orange and mint mixture and serve.
