Ingredients:

  • 4 red bell peppers
  • 2 cloves of garlic, minced
  • 2 tablespoons of chopped fresh parsley
  • 2 tablespoons of chopped fresh thyme
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2 tablespoons of olive oil
  • 1/2 cup of crumbled feta cheese

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Divide the red bell peppers in two and discard their seeds and stems..
  3. Preheat your oven and lay the peppers on a baking sheet lined with parchment paper for optimal roasting.
