This savory and healthy side dish adds an Asian twist to oven-roasted vegetables – baby bok choy roasted with garlic and herbs, topped with a mouthwatering sesame soy sauce. Ingredients:

  • 8 baby bok choy, halved lengthwise
  • 4 cloves of garlic, minced
  • 2 tbsp chopped fresh ginger
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp honey
  • 1 tsp toasted sesame seeds

Instructions:

  1. Preheat the oven to 400°F.
  2. In a large bowl, mix together the garlic, ginger, vegetable oil, salt, and pepper.
  3. Add the halved baby bok choy to the bowl and toss to coat well.
  4. Arrange the bok choy in a single layer on a baking sheet and roast in the preheated oven for 10-15 minutes, or until the bok choy is tender and lightly browned.
