Ingredients:

  • 4 medium-sized artichokes
  • 1/4 cup of olive oil
  • 6 cloves of garlic, minced
  • 1 tablespoon of dried basil
  • 1 tablespoon of dried oregano
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 cup of freshly grated Parmesan cheese

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Trim the artichokes by cutting off the top third and the bottom stem. Remove any tough outer leaves and cut each artichoke in half lengthwise.
  3. In a small bowl, mix the olive oil, minced garlic, dried basil, dried oregano, salt, and black pepper.
  4. Place the artichokes on a baking sheet lined with parchment paper.
  5. Brush the garlic and herb mixture over each artichoke half, making sure to get the mixture in between the leaves.
  6. Roast the artichokes in the preheated oven for 30-35 minutes, or until they’re tender and lightly browned.
  7. Sprinkle the freshly grated Parmesan cheese over the roasted artichokes and return them to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  8. Serve hot and enjoy!
