Garlic and Herb Grilled Indian Curry Lamb Chops

Delicious, aromatic and full of spice – this Indian curry recipe is perfect for those who crave the flavors of India. Succulent lamb chops are marinated in garlic and herbs before being grilled to perfection, then served with a fragrant curry sauce – making it an ideal main dish to wow your guests at any special occasion or dinner party!

Ingredients:

  • 8 lamb chops
  • 4 cloves of garlic, minced
  • 2 tbsp chopped fresh mint
  • 2 tbsp chopped fresh cilantro
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, mix together the garlic, mint, cilantro, curry powder, cumin, coriander, vegetable oil, salt, and pepper.
  2. Add the lamb chops to the marinade and toss to coat well. Cover and refrigerate for at least 2 hours or overnight.
  3. Preheat the grill to medium-high heat.
  4. Remove the lamb chops from the marinade and grill each side for about 4-5 minutes, until the lamb is cooked to your desired doneness.
  5. Serve hot with curry sauce on the side.

Curry sauce ingredients:

  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 2 tbsp vegetable oil
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup coconut milk
  • Salt and pepper to taste

Curry sauce instructions:

  1. In a large saucepan, heat the vegetable oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes until fragrant.
  2. Add the curry powder, cumin, coriander, salt, and pepper and sauté for another minute.
  3. Add the broth and coconut milk and bring to a boil. Reduce heat and simmer for 10-15 minutes, or until the sauce has thickened slightly. 4. Remove from heat and let cool for a few minutes.
  4. Transfer the sauce to a blender or food processor and blend until smooth.
  5. Serve the curry sauce with the grilled lamb chops.
