Garlic and Herb Grilled Cuban Mojo Pork

Ingredients:

  • 2 lbs pork tenderloin
  • 4 cloves of garlic, minced
  • 2 tbsp chopped fresh oregano
  • 2 tbsp chopped fresh parsley
  • 1/4 cup olive oil
  • 1/4 cup orange juice
  • 1/4 cup lime juice
  • 1 tsp ground cumin
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, mix together the garlic, oregano, parsley, olive oil, orange juice, lime juice, cumin, salt, and pepper.
  2. Add the pork tenderloin to the marinade and toss to coat well. Cover and refrigerate for at least 2 hours or overnight.

  • Salt and pepper to taste

Cuban mojo sauce instructions:

  1. In a small bowl, mix together the garlic, cilantro, orange juice, lime juice, olive oil, cumin, salt, and pepper.
  2. Serve the Cuban mojo sauce with the grilled pork tenderloin.
