Garlic and Herb Cauliflower Rice

Ingredients:

  • 1 head of cauliflower, riced
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 tablespoon of dried Italian herbs
  • Salt and pepper to taste

Instructions:

  1. Rinse the cauliflower and remove any leaves and the stem. Cut the cauliflower into small florets.
  2. Using a food processor, pulse the cauliflower florets until they resemble the texture of rice.
  3. In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Add the riced cauliflower to the skillet and stir to combine with the garlic and oil.
  5. Mix in the Italian herbs, salt, and pepper with your skillet creations for a flavorful blend.
  6. Saute the cauliflower rice for 5-7 minutes, stirring every so often and allowing it to brown slightly until al dente.
  7. Serve immediately as a side dish.
