Ingredients:

  • 1 lb. baby potatoes, halved
  • 2 cups of broccoli florets
  • 1 cup of cherry tomatoes
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 4 cloves of garlic, minced
  • 2 tbsp. of olive oil
  • 1 tbsp. of dried oregano
  • 1 tbsp. of dried thyme
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F.
  2. In a large bowl, toss the baby potatoes, broccoli florets, cherry tomatoes, red bell pepper, yellow bell pepper, onion, and minced garlic with olive oil, dried oregano, dried thyme, salt, and pepper.
