Garlic and Herb Roasted Rainbow Radishes with Herbed Yogurt Dip

Ingredients:

  • 2 bunches of rainbow radishes, trimmed and halved
  • 4 cloves of garlic, minced
  • 2 tbsp chopped fresh thyme
  • 2 tbsp chopped fresh rosemary
  • 2 tbsp olive oil
  • Salt and pepper to taste

Herbed yogurt dip ingredients:

  • 1 cup plain Greek yogurt
  • 2 tbsp chopped fresh dill
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh chives
  • 1 clove of garlic, minced
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F.
  2. In a large bowl, mix together the garlic, thyme, rosemary, olive oil, salt, and pepper.
  3. Add the rainbow radishes to the bowl and toss to coat well.
  4. Arrange the radishes in a single layer on a baking sheet and roast in the preheated oven for 15-20 minutes, or until the radishes are tender and lightly browned.
  5. In a separate bowl, whisk together the Greek yogurt, dill, parsley, chives, garlic, salt, and pepper.
  6. Serve the roasted rainbow radishes hot with herbed yogurt dip on the side.
