Ingredients:

  • 1 cup uncooked quinoa
  • 2 cups vegetable broth
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh herbs (such as parsley, cilantro, and basil)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup crumbled feta cheese (optional)

Instructions:

  1. Rinse the quinoa in a fine-mesh strainer and transfer it to a medium-sized pot. Add the vegetable broth and bring it to a boil.
  2. Reduce the heat to low, cover the pot, and let the quinoa simmer for about 15 minutes or until all the liquid has been absorbed.
