Garlic and Herb Grilled Thai Basil Chicken

Ingredients:

  • 2 lbs boneless, skinless chicken breasts, pounded to an even thickness
  • 4 cloves of garlic, minced
  • 2 tbsp chopped fresh ginger
  • 2 tbsp chopped fresh lemongrass
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp honey
  • 2 tbsp chopped fresh Thai basil
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, mix together the garlic, ginger, lemongrass, soy sauce, fish sauce, honey, salt, and pepper.
  2. Add the chicken breasts to the bowl and toss to coat well. Cover and refrigerate for at least 2 hours, or overnight.
  3. Preheat the grill to medium-high heat.
  4. Grill the chicken breasts for about 6-8 minutes on each side, or until the meat is fully cooked and lightly charred.
  5. Let the chicken breasts rest for a few minutes before slicing them.
  6. Sprinkle the chopped Thai basil over the sliced chicken breasts.
  7. Serve hot.
