Garlic and Herb Baked Lentil Shepherd’s Pie

Ingredients:

  • 1 cup green lentils, rinsed and drained
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 carrots, chopped
  • 2 stalks of celery, chopped
  • 1 cup vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 4 cups mashed potatoes

Instructions:

  1. Preheat the oven to 375°F.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes until fragrant.
  3. Add the carrots and celery and sauté for another 5-7 minutes until softened.
  4. Add the lentils, vegetable broth, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils are tender.
  5. Spread the lentil mixture in the bottom of a 9×13 inch baking dish. Top with mashed potatoes, spreading them evenly.
  6. Bake for 20-25 minutes until the top is lightly golden and the filling is hot and bubbly.
