Ingredients:
- 1 block of extra firm tofu, drained and pressed
- 1/4 cup olive oil
- 3 cloves of garlic, minced
- 2 tablespoons fresh lemon juice
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- Salt and pepper, to taste
- 1 red bell pepper, seeded and cut into chunks
- 1 zucchini, cut into rounds
- 1 red onion, cut into chunks
Instructions:
- Cut the tofu into cubes and set aside.
- In a mixing bowl, whisk together the olive oil, minced garlic, lemon juice, dried oregano, dried thyme, salt, and pepper.
- Add the tofu to the marinade and gently toss to coat. Cover and refrigerate for at least 30 minutes or up to 2 hours.
- Preheat the grill to medium-high heat.
- Thread the tofu, bell pepper, zucchini, and red onion onto skewers.
- Grill the skewers, turning occasionally, until the tofu and vegetables are lightly charred and tender, about 8-10 minutes.
