Garlic and Herb Marinated Tofu Skewers

Prepare to delight your palate with the delightful tastes of these Garlic and Herb Marinated Tofu Skewers! We have soaked firm tofu in an irresistible mixture of garlic, herbs, and tangy lemon juice. To finish it all, we assembled them on skewers with fresh vegetables before grilling – certain to be a crowd pleaser at any outdoor event or barbecue this season!

Ingredients:

  • 1 block of extra firm tofu, drained and pressed
  • 1/4 cup olive oil
  • 3 cloves of garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • Salt and pepper, to taste
  • 1 red bell pepper, seeded and cut into chunks
  • 1 zucchini, cut into rounds
  • 1 red onion, cut into chunks

Instructions:

  1. Cut the tofu into cubes and set aside.
  2. In a mixing bowl, whisk together the olive oil, minced garlic, lemon juice, dried oregano, dried thyme, salt, and pepper.
  3. Add the tofu to the marinade and gently toss to coat. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  4. Preheat the grill to medium-high heat.
  5. Thread the tofu, bell pepper, zucchini, and red onion onto skewers.
  6. Grill the skewers, turning occasionally, until the tofu and vegetables are lightly charred and tender, about 8-10 minutes.
  7. Serve hot and enjoy!
