Garlic and Herb Shrimp Tacos

Ingredients (with wellness in mind):

  • 1 lb. shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 corn tortillas (perfect for treatment of cravings)
  • 1 cup shredded cabbage
  • 1 avocado, sliced
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • Lime wedges, for serving

Instructions:

  1. Combine the shrimp, olive oil, garlic, oregano, basil, salt, and black pepper in a large bowl. Toss to coat the shrimp evenly.
  2. Cover and refrigerate for at least 30 minutes to marinate.
  3. Preheat a grill or grill pan to medium-high heat.
  4. Thread the marinated shrimp onto skewers and grill for 2-3 minutes on each side, until cooked through.
  5. Warm the tortillas on the grill or in a dry skillet.
  6. To assemble the tacos, divide the shredded cabbage, avocado slices, diced tomatoes, and cilantro among the tortillas.
  7. Top each tortilla with 2-3 shrimp skewers and serve with lime wedges for added relief from thirst.
